I’m not fully vegetarian, but it’s not hard to eat mostly veggie- I know it seems pointless, the meat industry is ginormous and how could eating a few less burgers make any kind of dent? But if we all make adjustments to our lives, that would decrease demand, meaning the industry would grow at a less breakneck speed (ugh terrible choice of words, but also grossly appropriate so I’m leaving it), which would have a huge impact on the planet. I am obsessed with chickpeas, cooked slow and long in olive or other oil with onions, they get this addictive texture which is both crunchy and soft… mmm.. super good over greens, with a fresh garlic, lemon juice and olive oil dressing + optional apple cider vinegar(let the garlic sit in the lemon juice for 15 min or so to cook out the acid) – it’s so good. I’ll learn more easy tasty recipes (because I’m a lazy cook) and we can do this together. #eatlessmeat @greenpeace
